I don't believe anyone has mentioned EtherPad here... it is awesome. It delivers on the promise of Google Wave. In fact, Google bought the company so they could hire the programmers, and now the tool is open source. In theory you can install your own.
Someone has set up a free EtherPad server: http://ietherpad.com Real-time document editing, text highlighting to tell you who made which edit, etc. Did I say real-time? Way faster than Google Docs.
