What version of Windows and Linux are you running? I was running on a 1270v2 server 2012 and was setting <0.5 var for my 10 slot 128 tick When I switched to Ubuntu low latency kernel it's still stable, but spikes over 1.0 var sometimes. Still not bad by any means, but the windows server 2012 CSGO server is more stable.
If you can share the details, perhaps we can figure out where the issue lies.
