when it comes to codecs & mac os x, install this plugin:

Perian

and also this one:

Flip4Mac (you'll find it on MSFT's site)

with those, you can play just about everything.

now, as for music management, to be honest, i just use the file system & 
drag music into my player.

as for players, have you tried this:

as for flac, i presume you've looked at

let us know what you find out & what you do (& btw, i haven't yet tried 
to get amarok installed on my mac, since i play all my music through my 
linux box, as you know).
