Are you making sure you "eject" the install medium for the OS before rebooting? That may be the issue. I use VMWare, and have to remember to disconnect the either virtual drive (it's happy to consider any .ISO file as a CD or DVD drive) or eject from the real drive (it can share that also). I'm really happy with VMWare Server so far. That being said, I tried the 2.0 beta, and was really unhappy with the new web interface, so I switched back to 1.0.6 (now 1.0.7).
