Excellent idea if you can do it.  
24 hour trading aswell.
The main problem you will have here though, is that all the big chain
operators, i.e. MacDonalds,  Burgerking, Starbucks, Boots, WH Smith, KFC
etc.. are already looking for units like this and have large financial clout
to back them up.   The same thing applies in any large town centre,
particularly in prime positions.   
I do know that the rental figure for a unit at main airports is very steep
but with the amount of time passengers have to wait and the bonus of delayed
flights, you could be on to a real winner.  
If you do open in an airport, remember that you need to get a flight
information board in a prominent position within your unit for customers
peace of mind.
With the way most airports work, most travellers like to book in at least 1
hour before their flight.  This means they all have at least 30 minutes to
kill before they are called to the departure lounge.  
For some airports the main concourse is where all the retail units are
positioned but for others, the departure lounge is the main shopping mall.
This is important as this will decide what part of the airport to position
yourself.  Most people waiting for a departure get bored  and would probably
use a cafe.  Those arriving at the airport are normally desperate to escape
and would not be target customers.  
We thought about something similar within Heathrow or Gatwick and also
looked at Jersey but rental costs and the lack of any available units put us
off.
