I checked your darktable.app  (1.1rc2) with codesign, it is not signed at all:

$ codesign -d darktable.app
darktable.app: code object is not signed at all
$

Ammon said that it can be signed with any "certificate issued by a
3rd-party CA".  Have you tried to sign the package with your GPG key?
And does codesign accept GPG keys?
