This has always been the case. This is not new for 1.1

Untouched images will likely use new defaults yes.

The enhanced matrix procedures more saturated images, which can in
extremely cases lead to a bit of loss of detail. You are free to keep
using the standard matrix, you can create your own personal defaults.
