The db should have all the *darktable* information that the sidecars have (AFAIK the few historical exceptions to this have been eliminated, somebody correct me if I'm wrong). You could just rename all the *.xmp files to *.xmp-26 or similar, which should be easily reversible (or purgeable) if you want to use sidecars with 3.0.
