Quick basic thing to understand: the directories under /usr/share are *system* directories, where default resources are usually installed alongside the applications which use them. Admin rights (aka "root") are required to modify them, but this isn't usually necessary because typically there will be a corresponding location for *user* resources within your own home directory. In the case of darktable, essentially everything is in your $HOME/.config/darktable directory (but sometimes the $HOME/.local/share directory is used by applications for things that aren't strictly "configuration"). Also, pay attention to tooltips when hovering over controls in darktable... they often provide useful information.
