Well, this is totally out of my budget! i7 in Greece costs almost 300€. My
budget would be something like 250€ for cpu + motherboard + RAM...

I own an EIZO S1931 which still works perfect, so I'n not going to replace
it. As fas as color calibrating is concerned, I'm thinking of getting
someday a Hughski ColorHug <http://www.hughski.com/>, but that's a second
priority now.

My concern here is Intel or AMD? I' ve been an AMD user for years now, but
I see that Intel tends to change sockets mpre sparse. That means that if in
a reasonable time I ant to change my cou, there will be more chances that I
will find something to fit my motherboard... On the other hand, AMD tends
to give more cores on the same price range..

I agree with thιs rationale, but my present graphics card is dead (together
with my psu and some of my RAM!). So, I had to purchase a new GPU in order
to do my job untill I upgrade (I got an nVidia GT640 with 2GB memory)
The one thing that we all seem to agree is RAM: the more, the better! So I
would definitely go for 8GB, mabe more (the 8GB cost a little less than
50€).
Regarding the 64bit system, is there any inconvenience in any other aspect?
Will 32bit programs run without trouble in a 64bit system?
