Most likely a permission problem. Please have a look here to get a 
deeper understanding of how OpenCL is supposed to work:

Either the needed kernel modules are not loaded by default. Then when 
you start darktable the Nvidia OpenCL driver tries to load them which 
does not work if you are not root. Or the permissions to the device 
special files do not allow your account write access.

I would recommend to first check those two aspects.
