Currently metadata handling is sub par in darktable, I meant to improve the situation since a long time and hope to get that done before 2.0 is due. Some metadata fields are available in more than one standard (we have basic support for Exif, IPTC and XMP), some are only available in one of those. Editable are only the 5 fields you can see in the metadata editor [0] and those are filled with whatever we find in any of the sources and stored to all places (at least Exif and XMP IIRC). That won't change after the rewrite of metadata handling, we will always put the same data into Exif, IPTC and XMP where possible. > 3) When developed raw images are exported, how much of the metadata is > stored within the exported image? How much as a sidecar file? That doesn't really make sense, exported images don't get a sidecar.
