Great having you at GeoBLR last week.
Excellent way to get started to OSM.

I usually point people to the guides that we have been working one
here https://www.mapbox.com/mapping/ and http://learnosm.org/en/

You can certainly use a mobile app to collect GPS traces. GPX is the
preferred format. You can drag and drop GPX to the iD editor and JOSM
editor.

Finally, you should join the OSM India mailing list
https://lists.openstreetmap.org/listinfo/talk-in - you will find these
type of questions answered quickly!
