Right. If it is a hard-requisite (I clearly don't see us taking buses to the countryside as doable for C&W), we should accept the servers requirement. It will be quite strange, though. And, of course, we will have to *pay* them. Any idea on how much does a licensed (is a license required?) bartender charge per, say, 4-5 hours? How many would we hire?
