You should be able to use gsetting from the shell to change the configuration
however. I can't remember the name of the accessibility option; I know it's
documented somewhere.

By the way, as of Gnome 3.6 they have enabled accessibility by default, and
apparently this has already resulted in Gnome developers finding and fixing
bugs that cause crashes only when ATK/AT-SPI is active.

So in the future there should be fewer of those issues.
