On the second-to-last line, why does apt say that it's "unpacking"
something? I believe that this should be changed to after "removal", or
something more appropriate.

Hello.
Apt should never write 'unpacking' or similar dpkg action by its own, it is
what dpkg
writes, apt only calls dpkg. Moreover, this is very old bug. I'm closing it.
Please submit
new bug against dpkg if you feel that this bug is yet exists.
