Yes, I know - especially for RAID systems or if you have duplicate UUIDs 
after cloning/backup.

Just found out that

 # xfs_admin  -U `uuidgen` /dev/hda7 
or
 # tune2fs /dev/hda8 -U `uuidgen`

will assign a new UUID to the partition (not possible for RAID systems).

Also, I found Kano's scripts to convert menu.lst and fstab to UUID:
