Since nobody seems to have suggested it yet, why don't you use
kernel-package?  Install the kernel-package package ('apt-get install
kernel-package'), and unpack and configure the kernel source.  Then
run 'make-kpkg buildpackage' from the top of the kernel source tree.
Come back a while later, and you should have Debian packages for the
kernel source, header files, documentation, and the kernel image
itself.  Install this last one normally using dpkg, and reboot.
