Clement did explain in the OP that he gets video when booting the
Bookworm kernel: "However if I manually select Debian Gnu/Linux, with
Linux 6.1.0-40-amd64 works like it always has with bookworm, immediately
recognizing both monitors."

It's normal for Debian update to leave a previous kernel so no action
needed and no reason to think there's something partial about his update.

WRT inxi, your should instruct people to use whatever option it has to
also show inxi version.
