If you're going to be looking at these graphs on an ongoing basis I'd
suggest rrdtool (simple) or grafana (complex).

For long term storage of time-series data SQL isn't the best, but for
your low end use it's probably fine. If you start amassing a lot of data
then you might consider either directly storing in rrd or a more complex
data store like prometheus or clickhouse.
