I like Xmail server (http://www.xmailserver.org), it is multi platform and can easily do what you want.

The obvious is to add this same IP to every domain listed in the hosts file, but would it be better to use Gateway Option, Send all remote mail through gateway Any comments/insights would be appreciated.
