The header contains:

is think %MAILFROM% will be  [EMAIL PROTECTED]
Is there a %Variable% that will give [EMAIL PROTECTED] ?

No -- Declude JunkMail only uses the return address, as it is the one that bounce messages would get sent to, and is the one primarily used for automated usage. There is no variable for the addresses in the From:, Sender:, Reply-To:, X-Sender:, Errors-To:, etc. headers.
