Although I run my mail server here, we do "lease" our IP address block from
our ISP. We don't, however, have our outgoing smtp settings configured for
our ISP's mailserver.

Does this have to be reflected in the set up as well?

All you would need here is to list the IP(s) that the mailserver uses -- if they are the same as your MX record, you can just use "mx" in the SPF record.
