It's fine if they don't have addresses _and_ aren't Exchange-enabled: the script certainly accounts for generic or temporary users who are in AD but not in Exchange. The problem is if they _are_ Exchange-enabled, but have 0 or 1 addresses. While I could see why all but one SMTP address might be deleted -- though this doesn't have any beneficial effect that I can think of -- there should be no reason for somebody to be Exchange-enabled (that includes both mailbox-enabled users and mail-enabled contacts), but have zero e-mail addresses.
