This probably isn't the best way to go about your request, but baretail from bare metal software http://www.baremetalsoft.com/baretail/index.php will allow you to do realtime monitoring of a log file. If you point it to your system log (or whatever log shows the smtp connections) you can watch what is going on.

the last few days the cpu on one of the servers is hitting 100% and the task manager is showing that the Pop3d32.exe thats causing this.
 
it would be great to know what or who is connecting to the server to cause that.
