I suspect SQLite is the most used database out there - given that it is
on every Android and iOS device

Remember MySQL being GPL means you can't ship it with your app -
unless you open source your app or pay for MySQL. Both Firebird and
Postgres are the only two "main" fully open source databases.

There is of course SQLLite but that is not a client server database by
any stretch. A very useful DB for particular uses and quite widely
used, but not a "real" DB by most terms.
