OK, I tracked this down, when enabling other things (JACK in particular I
think) evince can get unset. I've fixed this now in configure.ac
The fix is commit
fca62f292328bcd5a588a01d9ac5c226a17dd64a
in the master branch. The previous fix is still needed for those that want to
build Denemo without evince (e.g. non-interactive use, automated testing)
