No, in general they haven't cared what the menu item says, but some do still care enough not to want to change their applications to reflect that decision (which is what the GNOME Usability Team originally asked core GNOME apps to do). Which is why (say) gedit still says refers to itself as 'gedit', and not Text Editor.
