That's the source of the problem indeed, XDG_DATA_DIRS should contain /var/lib/snapd/desktop.
Could it be that your default shell is zsh (or something else ≠ bash)? I was able to make one app (spotify) show by symlinking its .desktop file from /var/lib/snapd/desktop/applications to /usr/share/applications. Strangely there is a chromium-browser.desktop file in /usr/share/applications but it still doesn't show up in activities overview.
