It's just because when you build gaia yourself, gaia doesn't automatically pull third-party apps from the marketplace. For devices that are released into the market, there is a configuration file which specifies which third party apps should be pulled from the marketplace upon image build time.

There's an old bug about including a default set of apps in dogfooding builds that is related:

It would probably be a good idea to include this default set of apps in builds made from scratch as well.
