Maybe you're seeing some colorspace conversion instead?

If your camera is using MJPEG (which was broken for a long time, and just re-landed) then obviously the video is compressed.

Cameras are inherently noisy, and often run mini-DSPs to do color correction, deflickering (florescents), denoising, low-light compensation (adds noise or removes detail or both), etc.

We do prefer YPrPb 4:2:0 video, and convert to that if it isn't.
