It's actually already fixed in main and cherry-picked to 3.1.2 - > so in 3.1.2 it's OK to have structlog 25.5.0. See https://github.com/apache/airflow/pull/57335 and it's been cherry-picked and merged as part of https://github.com/apache/airflow/pull/57640
