The Studio macOS app is actually signed, but not notarized. Notarization is an 
additional step on top that Apple requires now. It's planned to do that for the 
next Studio release.

I think the workaround with Right-click + Open works. I just tested it on macOS 
11.2. In your 3rd screenshot Screenshot 2021-02-05 at 16.33.06.png !Screenshot 
2021-02-05 at 16.33.06.png! there is actually an "Open" button.
