Very true.
A short summary: Our PDF export exports the used glyphs of a font. But
in a form field the user may enter any font, so we need to set a
complete font. A good default guess here is Helvetica since it is
guaranteed to be available in any reader and also provides glyphs for
most locales. The idea last proposed in issue 42985 is to echange
Helvetica for something arbitrary defined by the user, forcing the PDF
reader to use a system font. Downside: if that font is not available, on
the system the reader will end up displaying garbage in the form field.
