Have you tried the following?

RewriteEngine On
RewriteCond %{HTTP:Upgrade} =WebSocket [NC,NV]
RewriteRule ^/(.*) ws://my.backend:8080/$1 [P]
RewriteRule ^/(.*) http://my.backend:8080/$1 [P]
