Well I will tell you what we do.

We provide a security sandbox for customers so they can use tags like
CFFILE, CFDIRECTORY etc.
All your DSN's and databases are setup by you in our control panel.
If you have code that points at specific folders, it's down to you to make
sure it points at the right place, not the host. But you should be using
code that dynamically works out the paths, not using hard coded paths, as
the hosting company is obviously not going to have the same paths as you
have on your dev server.
