There were some ideas floated both a few years ago by Daniel and recently
by Kami regarding 'premium' repackagings of OOo. Those could be used for
the Schools Edition.
Also, the Skolelinux project has several years of experience customizing
F/OSS packages for the K12 environement:

Would making the 'School Edition' as an extension pack allow it to be
cross platform? e.g. OOo is already installed and then the CD of
clipart, fonts, templates, etc. can be added after. That would simplify
things.
