You can probably do without "--with-openssl=/usr/local/opt/openssl": as Damjan wrote, we carry a copy of it, which is automatically downloaded and built (and it was recently updated for the 4.1.2 release). Just remember to re-run ./bootstrap after you re-run ./configure with the new options.
