One possible solution is to use the FCKeditor extension for MediaWiki.
This would provide a nice WYSYIWYG editor environment for creating and
editing Wiki pages.
You can go play in a sandbox here:

yes! yes! yes! PLEASE!!!!!
I take that is a +10 vote :-)
If no one objects (I'll give it a day or so for people to respond), I
can install the extension this weekend sometime.
can we have both....at my work we use "jira" which provides both a
WYSIWYG capability, and more indepth wiki markup language (through tab
selection when you go into edit mode. But...maybe this is not possible
with our current implementation.
The FCKeditor has a button at the top left to turn the WYSIWYG off and
back on again, so it is very easy to switch between plain MediaWiki
markup and the FCKeditor. I can look into the options and see what is
possible to configure.
