One more thing, is this samba based setup even doable with multiple domains? Here at the configuration guide I see it starts with samba-tool domain provision --realm=example.com But we host a lot of domains for clients, what would be the case for them then?

In case you need the full-blown Exchange protocol, no this is not possible without samba if I understand everything correctly. I have ActiveSync running using only openldap, postgresql, apache and dovecot + postfix. If you need just the calendar & contacts working on the phones, I would start to look into caldav / carddav.
