One more thing, is this samba based setup even doable with multiple domains? 
Here at the configuration guide I see it starts with samba-tool domain 
provision --realm=example.com
But we host a lot of domains for clients, what would be the case for them then?

If you just want ActiveSync to support phones (whether it be android or iOS) 
then yes, it is possible without samba.
In case you need the full-blown Exchange protocol, no this is not possible 
without samba if I understand everything correctly.

I have ActiveSync running using only openldap, postgresql, apache and dovecot + 
postfix.
If you need just the calendar & contacts working on the phones, I would start 
to look into caldav / carddav.
Davdroid on android works really well, and iOS devices talk cal/carddav like a 
charm.
