Look at
xc/programs/Xserver/hw/xfree86/etc/bindist/<your_favourite_os>/host.def.
These are the host.def files used to build binaries for
ftp.xfree86.org.

You only need that if you want to edit the list.

Yes. 

BTW you can find some more information (and a sample on how to build a
small, static only server for debugging purpopses in:

that I already mentionned earlier. 
This text is aimed for the XFree86 tree shipped with OpenBSD, but most
of it is not specific to OpenBSD. 

I'll probably merge some of its informaion into the BUILD document in
the XFree86 tree if people find it useful.
