If I'm not mistaken, you can easily edit those mount options with gnome-disks.

Ah, I see it now! It is well hidden there: Click to the device at left,
then see gears icon in right in the middle, click and I will see that menu.

However my patch still makes sense, because it makes possible to create more complicated rules.

I may look at the configuration storage. Maybe it's possible to merge both.
