Hello all,
just a quick drive-by answer, I'll look more closely next week.

However having a possibility to configure mount options directly in
udisks2 would be nice, especially if it would support advanced
features like per-volume and per-device options.
Note that there is https://bugs.freedesktop.org/show_bug.cgi?id=33461
with an alternative approach using udev rules. That sounds better to
me than introducing yet another config file location/format?
Thanks for pointing to that. I was thinking about that approach as well.
This has few downsides:
- You cannot define mount options as user.
- You cannot pick correct options based on logged user's locale or time
zone.
That is why I consider the first example of use in the comment 3 as an
abuse.
And technically, there should be a possibility to add mount options, not
only define.
I agree, that this approach looks better integrated.
Maybe the best solution would be:
- Use udev for root based configuration.
- Use udisks2 / gnome-disks for user configuration.
