Just my personal opinion. It seems that the original way of specifying all possible fields at the beginning of the class is more readable than putting these names closer to the first version of the schema that uses the field.
There is similar discussion in https://github.com/apache/kafka/pull/5491#issuecomment-413283121. The situation is not exactly the same. I am not strong on this. Maybe @ijuma can also comment on which style is preferred.
