That field is updated everytime the domain record is viewed via WHOIS.
It believe it is set up as a timestamp field in the MySQL database
and they have some type of counter the increments when the domain
is view via WHOIS. The act of making any change to the database record
causes MySQL to automatically update the field.
You can test this out yourself. Wait until after midnight tonight. View
WHOIS for one of your domains once. Then do it again. The second time
should show the current date as the last updated.
