It's in the docs ;)

In the RWI there are several messages you can configure.  In most of those
messages, there exist "variables" that you can use to have the system place
pertinent information.  They are in the format of {{variable}}

For this specific message, it's in "Renewal Management" under "Renewal
confirmation" - the default message shows the variables that are available
for use in that message.
