Illustrator can save PDF and SVG, which are standards, but its own format is a proprietary mess. Inkscape is now good enough for me to use for real world work, but the lack of CMYK support would be a killer for some workflows. I have some files I saved with Mac Corel Draw a decade ago that no software on my current Mac will read. So I have personal experience of proprietary software locking me out of my own work.
