Very cool Dan. I think right off the bat, you should focus on some of these topics:
1) Making Ajax calls to CFCs. Most people are using a proxy cfm for this so and with CFCs being so important to CF development, this would be good for them to understand 2) Leveraging the taconite plugin for mass updates (this would wow most CF developers) 3) JSON handling: How to create a JSON packet in CF and how to parse it client side to build something out 4) Handling form data serialization on the client-side and server side 5) Leveraging jqModal (http://dev.iceburg.net/jquery/jqModal/) for a more interactive experience 6) A little more involved but how about showing how you can use thickbox plugin along with the star rating plugin to do a NetFlix style rating system? The calls can go back to CFCs that update a DB. What do you think? I'll try to think of some more ideas. Rey Dan G.
