It's not a useful question. There are many GNU programs that are made
available by illumos
distributions, largely because they provide useful capabilities, and
because users expect
and/or like them to be present. The answer to "how many" varies between
distributions and
what individual users have installed.

You can run illumos with no GNU utilities at all (although, sadly, we're
still dependent on a
GNU toolchain to build illumos itself).
