Hi Julian,
Fatface does well to communicate this IMO. They use:
- simple icons (tick=yes & cross=no/out-of-stock) and
- states (active/clickable=add to cart & non-active/not
clickable=out-of-stock)

Here's an example of a page where size '2-4' is available and other sizes
not:
